Wabi Sabi™ Tofu 1 Block

Chopped Onion ¼Cup
Prepare the veggies and the tofu by chopping them into small pieces.
Heat the Mustard oil until it starts smoking
Mix the dry spices in a bowl
Pour the oil over the spices and mix well.
Add the dahi (yogurt) in it and mix well.
To this, add the veggies and the tofu pieces.
Filling between your favourite bread slices and toast well on both sides.
Enjoy with green chutney
Wabi Sabi™ Tofu 400 gm or 2 Blocks (cubed)
Mustard oil 1 tbsp
Spices:
Kashmiri red chilli powder 1 tbsp
Jeera powder 1 tsp
Coriander powder 1 tbsp
Black salt ½ tsp
Amchur powder 1 tsp
Garam masala 1 tsp
Kasuri methi 1 tsp
Ginger garlic paste 1 tbsp
Lightly Roasted besan 1 tsp
Salt & black pepper to taste
Hung curd/thick curd ½ cup
Fresh coriander 1 tbsp (chopped)
Capsicum ½ cup (diced)
Onions ½ cup (petals, diced)
Tomatoes ½ cup (diced & deseeded)
Add mustard oil and Kashmiri red chilli powder in a bowl and mix well
Add the remaining powdered spices, ginger garlic paste, roasted besan & salt & black pepper powder to taste, mix well
Add freshly chopped coriander and hung curd, mix well.
Add diced onions, tomatoes and capsicum and Wabi Sabi™ Tofu cubes, mix well but gently.
Smoke the marinated tofu, by placing a hot charcoal and pouring a few drops of ghee over it, keep it covered for at least 4-5.
Skewer the Wabi Sabi™ Tofu, onions, tomatoes and capsicum.
After skewering, keep the extra marinade aside to be used later in gravy.
Cook and char the Tofu on an open flame, applying some melted butter over it. You can also choose to grill it on pan.

Wabi Sabi™ Tofu 250 gm (cut into cubes)
Salt & black pepper to taste
Corn starch 1/4th cup
Oil 3 tbsp
Garlic 13-15 cloves (chopped)
Ginger 1 inch (chopped)
Green chillies 8-10 nos. (slit)
Spring onion bulbs 5-6• Capsicum 2 medium size (diced)
Spring onion greens 1/4th cup (chopped)
Sugar 1 tsp
Soy sauce 2 tbsp
Red chilli sauce 2 tbsp
Cornflour 5 tbsp + water 100 ml
Salt & black pepper to taste
Spring onion greens for garnish (chopped)
In a mixing bowl, take salt & pepper to taste and corn flour, mix well.
Add the Tofu cubes and coat them well with the cornstarch mixture.
Set a pan on medium heat, add oil and shallow fry the Tofu from all the sides until golden brown.
Set a pan on high heat, add oil, garlic, ginger, green chillies and green onion sauté it on high flame for 3-4 minutes.
Add capsicum, spring onion greens and sugar, continue to sauté it for a minute.
Add soy sauce and red chilli sauce, sauté it for a minute.
In a bowl add cornflour and water and mix well and add the cornflour mixture, salt & pepper to taste, cook until the sauce thickens.
Add the fried Tofu, mix gently and coat the Tofu well with the sauce.
Garnish with freshly chopped spring onion greens.
Gram Flour 1 cup
Curd 2 Tbsp
Red chilli powder to taste
Ginger & garlic paste 1 Tbsp
Garam masala 1/2 Tbsp

Refined oil for frying
Cut tofu into cubes or rectangular pieces as desired.
Sprinkle a little salt on tofu pieces and keep aside for 15 minutes.
Mix gram flour, curd, red chilli powder, ginger paste, garlic paste, garam masala, salt and water to make a thick batter.
Dip the tofu pieces in the batter and deep fry in hot oil.
Serve hot with tomato ketchup or chutneys of your choice.
1 block Wabi Sabi Tofu
For Breading:
1 cup breadcrumbs
2 Tbsp oil
1 tsp chilli powder or paprika powder
Salt to taste
1/2 tsp black pepper powder
For Coating:
1/2 cup cornflour
1 cup milk of your choice
1 tsp Vinegar
Pat dry and press the tofu block to remove excess moisture. Cut into strips or cubes as desired.
Mix all the breadcrumb mixture in one bowl. In a second bowl, add the cornflour. In a third bowl, stir the vinegar and milk together to create buttermilk.
Dip the tofu individually in the cornstarch and then the buttermilk mix. Then roll them in the breadcrumb mix before placing on a baking sheet.
Bake in a preheated oven at 200°C for half an hour.
Alternatively, these can be deep fried in hot oil.
Serve with your favourite dips!

Chopped Onion, Spinach, Tomato, Mushrooms etc. as per your choice
Crumble the Tofu block into bite-sized pieces .
Heat the oil in a pan or a large skillet and add the veggies. Sauté for a few minutes, salt as per taste and set aside in a dish.
Now add the Tofu to the pan and cook over medium-high heat for 2-3 minutes.
Add all the spices and continue cooking for 5-7 minutes.
Mix in the sautéd vegetables and serve.
1 pack Wabi Sabi Tofu
Few Tbsp water
100g dark chocolate
2 Tbsp cocoa powder
2 tbsp maple syurp or sweetner of your choice
1 tsp vanilla extract
Pinch of salt
Melt the chocolate in a heat-proof bowl, over a pan of hot water. Keep stirring until fully melted, then remove from the heat to cool.
When the chocolate has cooled, add in to a blender or food processor with the remaining ingredients and blend.
Spoon out in small dishes. Grate over some extra chocolate on the top.
Refrigerate to set for around 1 hour, then serve.
